• The T-Bone is cut from a bone in single loin of beef from the Rump end up. The loin is aged for a minimum of 21 days on the bone. This steak contains a fillet and a Sirloin steak, either side of the cows back bone which forms the T shape. (Hence the name). The bone in the steak adds to the overall flavour of the product. As this steak contains a fillet as well as a sirloin steak the recommended cooking guideline is Medium Rare / Medium
